Chocolate Chip Biscotti

Ingredients

  • 1 cup Flour
  • 1/2 cup Chocolate Chips
  • 1/2 cup White Sugar
  • 1/2 cup Pecan Nuts (Chopped)
  • 1/4 cup Cocoa Powder
  • 2 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 2 Eggs (Beaten)

Method

  1. In a blender, combine the flour, salt, sugar, cocoa powder and chopped pecan nuts.
  2. Take a separate bowl and cream the vanilla extract and beaten eggs until peaks form.
  3. Gradually fold in the blended nut mixture while stirring continuously.
  4. Now add the chocolate chips and mix well.
  5. Roll out the dough on a floured board into foot-long logs.
  6. Place the logs on a greased baking tray.
  7. Place in an oven preheated to 350 F and bake for 30 minutes.
  8. Lift out of the oven and cut into thick slices.
  9. Bake the slices again for another 10 minutes before serving.
  10. Biscotti should be stored in an airtight container to preserve taste and texture.
