Ingredients
- 3 cup Flour
- 1 cup Chocolate (Chopped)
- 1 cup Demerera Sugar
- 1/2 cup Milk
- 1/2 cup Olive Oil
- 1/2 cup Cocoa Powder
- 3 tsp Balsamic Vinegar
- 1 tsp Baking Powder
- 1/2 tsp Cinnamon
- 1/2 tsp Salt
- 2 Eggs (Beaten)
- 1 Egg White
Method
- Take a large bowl and mix together the cocoa powder, cinnamon, salt, baking powder and flour.
- Using a mixing bowl, combine the olive oil, beaten eggs, egg yolk, demerera sugar, milk and balsamic vinegar.
- Gradually mix the dry flour mixture into the wet mixture while stirring continuously.
- Fold in the chopped chocolate and mix until stiff.
- Cover the bowl and refridgerate overnight.
- Put the cooled mixture onto a floured board and roll into foot-long logs a few inches thick.
- Place the logs on a greased baking tray.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- Lift out of the oven and cut into thick slices.
Bake the slices again for another 10 minutes before serving.
- Biscotti should be stored in an airtight container to preserve taste and texture.
