Double Chocolate Biscotti

Ingredients

  • 3 cup Flour
  • 1 cup Chocolate (Chopped)
  • 1 cup Demerera Sugar
  • 1/2 cup Milk
  • 1/2 cup Olive Oil
  • 1/2 cup Cocoa Powder
  • 3 tsp Balsamic Vinegar
  • 1 tsp Baking Powder
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 2 Eggs (Beaten)
  • 1 Egg White

Method

  1. Take a large bowl and mix together the cocoa powder, cinnamon, salt, baking powder and flour.
  2. Using a mixing bowl, combine the olive oil, beaten eggs, egg yolk, demerera sugar, milk and balsamic vinegar.
  3. Gradually mix the dry flour mixture into the wet mixture while stirring continuously.
  4. Fold in the chopped chocolate and mix until stiff.
  5. Cover the bowl and refridgerate overnight.
  6. Put the cooled mixture onto a floured board and roll into foot-long logs a few inches thick.
  7. Place the logs on a greased baking tray.
  8. Place in an oven preheated to 350 F and bake for 30 minutes.
  9. Lift out of the oven and cut into thick slices.
  10. Bake the slices again for another 10 minutes before serving.
  11. Biscotti should be stored in an airtight container to preserve taste and texture.
