Ginger White Chocolate Biscotti

Ingredients

  • 3 cups Flour
  • 1 cup White Chocolate (Chopped)
  • 1 cup Ginger (Crystalized)
  • 1 cup White Sugar
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 Eggs (Beaten)

Method

  1. Using a mixing bowl, combine the vanilla extract, sugar and beaten eggs.
  2. Gradually sift in the flour, baking powder, baking soda and salt while stirring.
  3. Fold in the chopped white chocolate and ginger and mix until a dough.
  4. Place the dough on a floured surface and roll into foot-long logs.
  5. Place the logs on a greased baking tray.
  6. Place in an oven preheated to 350 F and bake for 30 minutes.
  7. Lift out of the oven and cut into thick slices.
  8. Bake the slices again for another 10 minutes before serving.
  9. Biscotti should be stored in an airtight container to preserve taste and texture.
