Ingredients
- 3 cups Flour
- 1 cup White Chocolate (Chopped)
- 1 cup Ginger (Crystalized)
- 1 cup White Sugar
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 2 Eggs (Beaten)
Method
- Using a mixing bowl, combine the vanilla extract, sugar and beaten eggs.
- Gradually sift in the flour, baking powder, baking soda and salt while stirring.
- Fold in the chopped white chocolate and ginger and mix until a dough.
- Place the dough on a floured surface and roll into foot-long logs.
- Place the logs on a greased baking tray.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- Lift out of the oven and cut into thick slices.
Bake the slices again for another 10 minutes before serving.
- Biscotti should be stored in an airtight container to preserve taste and texture.
