Italian Chocolate Biscotti

Ingredients

  • 3 cups Flour
  • 1 cup White Sugar
  • 3/4 cup Chocolate (Chopped)
  • 1/2 cup Almonds (Chopped)
  • 1/2 cup Butter (Softened)
  • 1 tbl Baking Powder
  • 1 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 4 Eggs (Beaten)
  • 3 Lemon Peels
  • 2 Orange Peels

Method

  1. Using a mixing bowl, combine the flour, sugar, chopped almonds, chopped chocolate, baking powder and salt.
  2. Gradually mix in the beaten eggs and vanilla extract.
  3. Fold in the lemon peel and orange peel and mix until a dough.
  4. Place the dough on a floured surface and roll into foot-long logs.
  5. Place the logs on a greased baking tray.
  6. Place in an oven preheated to 350 F and bake for 30 minutes.
  7. Lift out of the oven and cut into thick slices.
  8. Bake the slices again for another 10 minutes before serving.
  9. Biscotti should be stored in an airtight container to preserve taste and texture.
