Vanilla Biscotti

Ingredients

  • 3-1/2 cups Flour
  • 1-1/2 cups Shortening
  • 1 cup White Sugar
  • 1/4 cup Honey
  • 1 tbl Orange Extract
  • 1 tbl Vanilla Extract
  • 2 Egg Whites

Method

  1. Using a large mixing bowl, combine the shortening, sugar, honey, egg whites, vanilla extract and orange extract until light.
  2. Gradually sift in the flour while stirring continuously.
  3. Roll out the dough on a floured board into foot-long logs.
  4. Place the logs on a greased baking tray.
  5. Place in an oven preheated to 350 F and bake for 30 minutes.
  6. Lift out of the oven and cut into thick slices.
  7. Bake the slices again for another 10 minutes before serving.
  8. Biscotti should be stored in an airtight container to preserve taste and texture.
