Ingredients
- 1 cup Demerera Sugar (Soft)
- 1 cup Chocolate Chips
- 1/2 cup Nuts (Chopped)
- 3/4 cup Flour
- 1/4 cup Shortening
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 tsp Vanilla Extract
- 1 Egg (Beaten)
Method
- Using a small saucepan over a steady heat, melt the shortening.
- Lift off the heat and combine with vanilla extract, sugar and beaten egg.
- Mix in the flour, chocolate chips, nuts, baking powder and salt.
- Pour the batter into a greased 9“ cake tin.
- Place in an oven preheated to 350 F and bake for 20 minutes.
- Lift out to cool on a wire rack.
- Sprinkle generously with sugar and enjoy!
