Chocolate Mocha Brownies

Mixture Ingredients

  • 2 cups White Sugar
  • 1-1/2 cups Cake Flour
  • 1 cup Cooking Chocolate (Melted)
  • 1/2 cup Pecan Nuts (Chopped)
  • 1/2 cup Shortening
  • 1/2 cup Butter (Melted)
  • 2 tbl Instant Coffee Granules
  • 1 tsp Baking Powder
  • 4 Eggs (Beaten)

Topping Ingredients

  • 2-1/2 cup White Sugar
  • 1/4 cup Butter (Softened)
  • 1/2 tbl Vanilla Extract

Method

  1. Take a small bowl and melt the chocolate with the coffee while stirring.
  2. Using a separate bowl, cream the shortening and butter until fluffy.
  3. Sift in the salt, baking powder, sugar and flour while stirring.
  4. Mix in the beaten eggs, coffee, pecans and chocolate.
  5. Pour the batter into a greased 9“ cake pan.
  6. Place in an oven preheated to 350 F and bake for 45 minutes.
  7. Lift out to cool on a wire rack.
  8. For the topping, mix together all the ingredients until smooth.
  9. Spread over the top before cutting.
