Mixture Ingredients
- 2 cups White Sugar
- 1-1/2 cups Cake Flour
- 1 cup Cooking Chocolate (Melted)
- 1/2 cup Pecan Nuts (Chopped)
- 1/2 cup Shortening
- 1/2 cup Butter (Melted)
- 2 tbl Instant Coffee Granules
- 1 tsp Baking Powder
- 4 Eggs (Beaten)
Topping Ingredients
- 2-1/2 cup White Sugar
- 1/4 cup Butter (Softened)
- 1/2 tbl Vanilla Extract
Method
- Take a small bowl and melt the chocolate with the coffee while stirring.
- Using a separate bowl, cream the shortening and butter until fluffy.
- Sift in the salt, baking powder, sugar and flour while stirring.
- Mix in the beaten eggs, coffee, pecans and chocolate.
- Pour the batter into a greased 9“ cake pan.
- Place in an oven preheated to 350 F and bake for 45 minutes.
- Lift out to cool on a wire rack.
- For the topping, mix together all the ingredients until smooth.
- Spread over the top before cutting.
