Ingredients
- 1-1/2 cups Sugar
- 1-1/2 cups Neufchatel Cheese
- 1 cup Cottage Cheese
- 1 cup Prunes (Chopped)
- 1/4 cup Chocolate (Chopped)
- 1 tbl Vanilla Extract
- 1 tbl Water
- 1 tsp Vegetable Oil
- 1/4 tsp Salt
- 3 Eggs (Beaten)
- 1 Egg White
- 1 pkt Fudge Mix
Method
- Using a mixing bowl, combine the egg white, chopped prunes, water, vegetable oil and fudge mix.
- Once the mixture is smooth and without lumps, pour into a 9“ greased cake tin.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- Lift out and place on a wire rack to cool.
- Break up the brownies and press back into the bottom of the cake tin.
- Take a mixing bowl and whisk the beaten eggs, sugar, salt, vanilla extract and cottage cheese until smooth.
- Pour the mixture over the base in the cake tin.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- Now turn off the oven, but keep the cheesecake inside for about 45 minutes to set.
- Remove from the oven and refridgerate.
