Brownie Cheesecake

Ingredients

  • 1-1/2 cups Sugar
  • 1-1/2 cups Neufchatel Cheese
  • 1 cup Cottage Cheese
  • 1 cup Prunes (Chopped)
  • 1/4 cup Chocolate (Chopped)
  • 1 tbl Vanilla Extract
  • 1 tbl Water
  • 1 tsp Vegetable Oil
  • 1/4 tsp Salt
  • 3 Eggs (Beaten)
  • 1 Egg White
  • 1 pkt Fudge Mix

Method

  1. Using a mixing bowl, combine the egg white, chopped prunes, water, vegetable oil and fudge mix.
  2. Once the mixture is smooth and without lumps, pour into a 9“ greased cake tin.
  3. Place in an oven preheated to 350 F and bake for 30 minutes.
  4. Lift out and place on a wire rack to cool.
  5. Break up the brownies and press back into the bottom of the cake tin.
  6. Take a mixing bowl and whisk the beaten eggs, sugar, salt, vanilla extract and cottage cheese until smooth.
  7. Pour the mixture over the base in the cake tin.
  8. Place in an oven preheated to 350 F and bake for 30 minutes.
  9. Now turn off the oven, but keep the cheesecake inside for about 45 minutes to set.
  10. Remove from the oven and refridgerate.
