Chocolate Almond Pound Cake

Ingredients

  • 2 cups Flour
  • 1-1/2 cups Sugar
  • 1 cup Milk
  • 1 cup Cornmeal
  • 1/2 cup Butter (Melted)
  • 1/2 cup Chocolate
  • 1/2 cup Almonds (Chopped)
  • 1/2 tbl Almond Essence
  • 1/2 tsp Baking Powder
  • 4 Eggs (Beaten)

Method

  1. Place the dark cooking chocolate in a bowl and melt over a saucepan full of hot water.
  2. Take a mixing bowl and combine the beaten eggs, sugar and butter until fluffy.
  3. Now fold in the ground almonds and melted chocolate.
  4. Using a separate bowl, mix the flour, cornmeal, baking powder and milk together. Then add to the creamed mixture.
  5. Pour the batter into a greased cake tin.
  6. Place in an oven preheated to 350 F and bake for 60 minutes.
  7. Lift out and place on a wire rack to cool.
