Chocolate Almond Rum Cake

Mixture Ingredients

  • 1-1/4 cups Cooking Chocolate (Dark)
  • 1-1/4 cups Butter
  • 1 cup Almonds (Ground)
  • 1 cup White Sugar
  • 1 cup Rum
  • 3/4 cup Flour
  • 6 Egg Yolks
  • 6 Egg Whites

Topping Ingredients

  • 1 cup Almond Flakes
  • 1/2 cup Butter
  • 1/2 Cooking Chocolate (Dark)
  • 2 tbl Rum

Method

  1. Place the dark cooking chocolate in a bowl and melt over a saucepan full of hot water.
  2. Take a mixing bowl and combine sugar and butter until fluffy.
  3. Now fold in the ground almonds and melted chocolate.
  4. Using a separate bowl, whip the egg whites until stiff and then fold into the mixture.
  5. While stirring gently, sift the flour in.
  6. Pour the batter into a greased cake tin.
  7. Place in an oven preheated to 350 F and bake for 45 minutes.
  8. Lift out and place on a wire rack to cool.
  9. For the topping, place the dark cooking chocolate, rum and butter in a bowl and melt over a saucepan of hot water.
  10. Stir the mixture until smooth and without lumps.
  11. Spread over the top of the cake and cover with almond flakes.
