Mixture Ingredients
- 1-1/4 cups Cooking Chocolate (Dark)
- 1-1/4 cups Butter
- 1 cup Almonds (Ground)
- 1 cup White Sugar
- 1 cup Rum
- 3/4 cup Flour
- 6 Egg Yolks
- 6 Egg Whites
Topping Ingredients
- 1 cup Almond Flakes
- 1/2 cup Butter
- 1/2 Cooking Chocolate (Dark)
- 2 tbl Rum
Method
- Place the dark cooking chocolate in a bowl and melt over a saucepan full of hot water.
- Take a mixing bowl and combine sugar and butter until fluffy.
- Now fold in the ground almonds and melted chocolate.
- Using a separate bowl, whip the egg whites until stiff and then fold into the mixture.
- While stirring gently, sift the flour in.
- Pour the batter into a greased cake tin.
- Place in an oven preheated to 350 F and bake for 45 minutes.
- Lift out and place on a wire rack to cool.
- For the topping, place the dark cooking chocolate, rum and butter in a bowl and melt over a saucepan of hot water.
- Stir the mixture until smooth and without lumps.
- Spread over the top of the cake and cover with almond flakes.
