Chocolate Carrot Cake

Ingredients

  • 1-1/2 cups Carrots (Grated)
  • 1-1/2 cups Wholewheat Flour
  • 1 cup Water (Boiling)
  • 1/2 cup White Sugar
  • 1/2 cup Cocoa
  • 1/2 Vegetable Oil
  • 1/2 tbl Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Salt

Method

  1. Using a large mixing bowl, combine the oil, boiling water, sugar and grated carrots.
  2. Take a separate bowl and combine the wholewheat flour, baking powder, cinnamon and salt before adding to the the carrot mixture.
  3. Pour the batter into a greased 8“ cake pan.
  4. Place in an oven preheated to 350 F and bake for 30 minutes.
  5. Lift out of the oven and place on a wire rack to cool.
