Ingredients
- 1-1/2 cups Carrots (Grated)
- 1-1/2 cups Wholewheat Flour
- 1 cup Water (Boiling)
- 1/2 cup White Sugar
- 1/2 cup Cocoa
- 1/2 Vegetable Oil
- 1/2 tbl Baking Powder
- 1 tsp Cinnamon
- 1/2 tsp Salt
Method
- Using a large mixing bowl, combine the oil, boiling water, sugar and grated carrots.
- Take a separate bowl and combine the wholewheat flour, baking powder, cinnamon and salt before adding to the the carrot mixture.
- Pour the batter into a greased 8“ cake pan.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- Lift out of the oven and place on a wire rack to cool.
