Chocolate Cranberry Cake

Ingredients

  • 1-1/2 cups Cranberries (Chopped)
  • 1 cup Cooking Chocolate (Melted)
  • 1 cup Sugar
  • 2/3 cup Butter
  • 1/2 cup Flour
  • 3 tbl Sugar
  • 3 tbl Cranberry Liqueur
  • 1 tsp Vanilla Extract
  • 4 Egg Yolks
  • 4 Egg Whites

Method

  1. Using a large mixing bowl, combine the sugar and softened butter until fluffy.
  2. Fold in the vanilla extract, cranberry liqueur and chocolate.
  3. While stirring, add the egg yolks, chopped cranberries and flour.
  4. In a separate bowl, whip up the egg whites and 2 tablespoons of white sugar until stiff.
  5. Gradually fold the egg whites into the batter.
  6. Pour the batter into a greased 8“ cake pan.
  7. Place in an oven preheated to 350 F and bake for 30 minutes.
  8. Lift out of the oven and place on a wire rack to cool.
