Ingredients
- 1-1/2 cups Cranberries (Chopped)
- 1 cup Cooking Chocolate (Melted)
- 1 cup Sugar
- 2/3 cup Butter
- 1/2 cup Flour
- 3 tbl Sugar
- 3 tbl Cranberry Liqueur
- 1 tsp Vanilla Extract
- 4 Egg Yolks
- 4 Egg Whites
Method
- Using a large mixing bowl, combine the sugar and softened butter until fluffy.
- Fold in the vanilla extract, cranberry liqueur and chocolate.
- While stirring, add the egg yolks, chopped cranberries and flour.
- In a separate bowl, whip up the egg whites and 2 tablespoons of white sugar until stiff.
- Gradually fold the egg whites into the batter.
- Pour the batter into a greased 8“ cake pan.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- Lift out of the oven and place on a wire rack to cool.
