Mississippi Mud Cake

Ingredients

  • 1-1/2 cups Water (Boiling)
  • 1-1/4 cups Flour
  • 1 cup Pecan Nuts (Chopped)
  • 1 cup Demerera Sugar
  • 3/4 cup White Sugar
  • 1/2 cup Chocolate (Unsweetened)
  • 6 tbl Milk
  • 2 tbl Vinegar
  • 2 tbl Butter
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt

Method

  1. Take a large bowl and combine the baking soda, salt, flour and sugars.
  2. Then, melt the butter and chocolate in a bowl over a saucepan of hot water.
  3. Using a small bowl, mix together the vinegar and milk.
  4. Add to the chocolate mixture.
  5. Pour the chocolate mixture into the dry flour mix and stir continuously.
  6. Fold in the chopped pecan nuts.
  7. Pour into a 8“ wide, greased cake pan.
  8. Combine 1/4 cup of unsweetended chocolate with the boiling water and blend. Then pour over the cake.
  9. Place in an oven preheated to 350 F and bake for about 45 minutes.
  10. Remove from oven and place on a wire rack to cool.
