Mixture Ingredients
- 1-1/2 cups Flour
- 1-1/2 cups Sugar
- 1 cup Coffee (Black)
- 1/2 cup Milk (Semi Skimmed)
- 1/2 cup Cocoa Powder
- 1/4 cup Corn Syrup
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 3 Egg Whites
Topping Ingredients
- 1/2 cup Corn Syrup
- 1 tsp Instant Coffee Granules
- 1 Egg White
Method
- Take a mixing bowl and combine the sugar, flour, baking soda, baking powder, salt and cocoa powder.
- In another bowl, mix together the coffee, semi skimmed milk, corn syrup and egg whites until smooth.
- Make a well in the flour mixture.
- Now pour in the coffee mixture while stirring continuously until smooth.
- Pour the batter into a greased 9“ cake tin.
- Place in an oven preheated to 350 F and bake for 45 minutes.
- Lift out and place on a wire rack to cool.
- to make the topping, take a small saucepan and bring the corn syrup to boil.
- Whisk the egg white until peaks form in a separate bowl.
- Gradually fold in the instant coffee and heated corn syrup.
- Continue to beat the mixture until stiff, then spread over the cake.
