Chocolate Mocha Cake

Mixture Ingredients

  • 1-1/2 cups Flour
  • 1-1/2 cups Sugar
  • 1 cup Coffee (Black)
  • 1/2 cup Milk (Semi Skimmed)
  • 1/2 cup Cocoa Powder
  • 1/4 cup Corn Syrup
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 3 Egg Whites

Topping Ingredients

  • 1/2 cup Corn Syrup
  • 1 tsp Instant Coffee Granules
  • 1 Egg White

Method

  1. Take a mixing bowl and combine the sugar, flour, baking soda, baking powder, salt and cocoa powder.
  2. In another bowl, mix together the coffee, semi skimmed milk, corn syrup and egg whites until smooth.
  3. Make a well in the flour mixture.
  4. Now pour in the coffee mixture while stirring continuously until smooth.
  5. Pour the batter into a greased 9“ cake tin.
  6. Place in an oven preheated to 350 F and bake for 45 minutes.
  7. Lift out and place on a wire rack to cool.
  8. to make the topping, take a small saucepan and bring the corn syrup to boil.
  9. Whisk the egg white until peaks form in a separate bowl.
  10. Gradually fold in the instant coffee and heated corn syrup.
  11. Continue to beat the mixture until stiff, then spread over the cake.
