Ingredients
- 1 cup Sugar
- 2/3 cup Flour
- 1/2 cup Mixed Nuts (Chopped)
- 1/2 cup Coconut Flakes
- 1/3 cup Water
- 1/3 cup Unsweetened Cocoa
- 1/4 cup Butter (Softened)
- 2 tsp Vanilla Extract
- 3 Eggs (Beaten)
- 2 Egg Yolks
- 1 can Condensed Milk
Method
- Take a mixing bowl and combine the coconut flakes, chopped mixed nuts, vanilla extract, vanilla extract, milk and egg yolks.
- Pour the batter into a greased 9“ edged pan.
- In a separate bowl, mix together 3 whole eggs until light and fluffy.
- Fold in the sugar, condensed milk and cocoa.
- Pour over the cake mix in the pan.
- Place in an oven preheated to 350 F and bake for 30 minutes.
- Lift out and place on a wire rack to cool.
- Sprinkle the top generously with sugar.
- Place on a flat surface and roll up.
- Put the rolled up cake onto a serving platter, with the seam down.
- For the topping, take another bowl and melt 2oz of cooking chocolate on top of a saucepan full of warm water.
- Add 1/2 a teaspoon of vanilla extract and 2 tablespoons of metled butter and stir well.
- Drizzle over the top of the cake and smooth out.
