Low Fat Chocolate Cake

Mixture Ingredients

  • 1-1/4 cups Flour
  • 1 cup Water
  • 1 cup Sugar
  • 1/2 cup Cocoa Powder
  • 1/2 cup Corn Syrup
  • 1/4 cup Cornstarch
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 4 Egg Whites

Topping Mixture

  • 1 cup Powdered Sugar
  • 1/3 cup Cocoa Powder
  • 2 tbl Water
  • 1 tsp Vanilla Extract
  • 1 Egg White

Method

  1. Take a mixing bowl and combine the cocoa powder, sugar, cornstarch, flour, baking soda and salt.
  2. Using another bowl, whisk the water, corn syrup and egg whites until stiff and peaky.
  3. Fold gradually into the flour mixture while stirring.
  4. Pour onto a greased 9“ baking tray.
  5. Place in an oven preheated to 350 F and bake for 30 minutes.
  6. Lift out of the oven and cool on a wire rack.
  7. For the topping, combine the sugar, cocoa, water, vanilla extract and egg white until smooth.
  8. Pour onto the cake and spread evenly.
  9. Allow the topping to set before serving.
