Ingredients
- 2 cups Oats (Rolled)
- 2 cups Chocolate Chips
- 1-1/2 cups Flour
- 1 cup Pecan Nuts (Chopped)
- 1 cup Shortening
- 3/4 cup Demerera Sugar
- 3/4 cup White Sugar
- 1 tsp Baking Soda
- 1 tsp Vanilla Extract
- 1 tsp Salt
- 2 Eggs (Beaten)
Method
- In a large bowl, cream together the white sugar, demerera sugar and shortening until combined.
- Mix in the vanilla extract and beaten eggs until a light an fluffy consistency.
- While stirring continuously, add the rolled oats, chopped pecan nuts and chocolate chips.
- Spoon onto a greased baking sheet in whatever sized cookies you desire.
- Place in an oven preheated to 350 F and bake for about 10 minutes until brown.
