Soft Chocolate Chip Cookies

Ingredients

  • 2-1/2 cups Oats (Rolled)
  • 2 cups Flour
  • 1-1/2 cup Pecan Nuts (Chopped)
  • 1 cup White Sugar
  • 1 cup Demerera Sugar
  • 1 cup Butter (Softened)
  • 1 cup Chocolate Chips
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 Eggs (Beaten)
  • 1 Chocolate Bar (Grated)

Method

  1. In a large bowl, cream together the vanilla extract, white sugar, demerera sugar and beaten eggs until combined.
  2. Take a separate bowl and mix together the oats, salt, baking soda and baking powder.
  3. Sift in the flour while stirring.
  4. Pour the flour mixture into a blender. Process until a powdery consistency.
  5. Pour in the creamed mixture and blend.
  6. Now put into a bowl and add the chocolate chips, chopped pecan nuts and the grated chocolate bar while stirring continuously.
  7. Spoon onto a greased baking sheet in whatever sized cookies you desire.
  8. Place in an oven preheated to 350 F and bake for about 10 minutes until brown.
