Ingredients
- 4 cups Milk (Semi Skimmed)
- 1-1/2 cups Cream
- 1/2 cup Cocoa Powder
- 1/2 cup Chocolate (Chopped)
- 1/4 cup Corn Syrup
- 2 tbl Demerera Sugar
- 2 tbl Cornstarch
- 1-1/2 tbl Coffee Liqueur
- 1/2 tbl Vanilla Extract
- 2 Eggs Yolks (Beaten)
Method
- Take a saucepan over a medium heat and combine the demerera sugar, 3 cups of milk and corn syrup.
- At the same time, mix together the cocoa powder, cornstarch, 1 cup of milk and the beaten egg yolks.
- Pour the egg mixture into the saucepan and mix until smooth.
- Lift off from heat and gradually fold in the chocolate, vanilla extract and coffee liqueur.
- Keep mixing until smooth and without lumps.
- Set aside and allow to cool.
- Pour into an ice cream maker and process, then freeze.
