Chocolate Vanilla Ice Cream

Ingredients

  • 4 cups Milk (Semi Skimmed)
  • 1-1/2 cups Cream
  • 1/2 cup Cocoa Powder
  • 1/2 cup Chocolate (Chopped)
  • 1/4 cup Corn Syrup
  • 2 tbl Demerera Sugar
  • 2 tbl Cornstarch
  • 1-1/2 tbl Coffee Liqueur
  • 1/2 tbl Vanilla Extract
  • 2 Eggs Yolks (Beaten)

Method

  1. Take a saucepan over a medium heat and combine the demerera sugar, 3 cups of milk and corn syrup.
  2. At the same time, mix together the cocoa powder, cornstarch, 1 cup of milk and the beaten egg yolks.
  3. Pour the egg mixture into the saucepan and mix until smooth.
  4. Lift off from heat and gradually fold in the chocolate, vanilla extract and coffee liqueur.
  5. Keep mixing until smooth and without lumps.
  6. Set aside and allow to cool.
  7. Pour into an ice cream maker and process, then freeze.
