Double Chocolate Ice Cream

Ingredients

  • 2 cups Milk Chocolate (Chopped)
  • 1-1/2 cups Milk
  • 1 cup Double Cream
  • 1 cup Vanilla Extract
  • 1 cup Sugar
  • 1/2 cup Cocoa Powder
  • 1 tbl Vanilla Extract
  • 2 Eggs (Beaten)

Method

  1. Melt the chopped milk chocolate in a bowl over a saucepan of hot water.
  2. After the chocolate has been melted, gradually mix in the milk and cocoa while stirring until smooth.
  3. In a separate bowl, whisk together the beaten eggs and sugar until light and fluffy.
  4. Gently fold in the vanilla extract and double cream while stirring slowly.
  5. Take a large bowl and pour both mixtures together while stirring.
  6. Cover the bowl with cling film and place in the fridge for 2 hours.
  7. Pour into an ice cream maker and process, then freeze.
